BBQ Chicken Pizza Recipe:

Ingredients:                                         Method:
1) 1/3 cup + 2 tablespoons dark barbecue sauce
2) 1/2 pound prepared pizza dough (at room temperature)
3) 1 tsp extra virgin olive oil
4) 2/3 cup cheddar cheese 3 ounces
5) 2/3 cup mozzarella cheese 3 ounces
6) 1 8 ounce boneless chicken breast
7) Kosher salt and freshly ground pepper
8) 1/2 small red onion and cilantro for topping.

Take a large bowl brush it with olive oil. Put pizza dough in the bowl and coat it with the oil. Cover tightly with plastic wrap and keep it in a warm place for 30 - 40 min.
Position the racks in upper third and middle of the oven. Now place a pizza stone on the top rack and preheat the oven to 425 degrees F for at least 30 min.
For the mean time, lay out a sheet of parchment paper and brush with olive oil. Use a rolling pin, roll out the dough in 10-inch round roti  stretch it with your hands if it needs then again brush the roti with olive oil lightly, cover with another piece of parchment and set aside to let rise slightly, just for 30 min.
When dough rises mix 2 tablespoons BBQ sauce and 1 tsp olive oil in a small bowl. Put the chicken in a baking dish, sprinkling salt and pepper on it and brush with the BBQ sauce mixture then bake on the middle oven rack until it cooked well, just about 20 min. Now cut it into 1/2-inch cubes.
After that uncover the dough and spread with the remaining 1/3 cup BBQ sauce, leaving a 3/4-inch edges. Top with the red onion, mozzarella, gouda and chicken. Slide the pizza (on the parchment) onto a pizza peel, then slide onto the baking sheet or on a hot stone bake until the cheese melts and the crust is golden, 20 - 25 min. Sprinkle with cilantro. Awesome BBQ Pizza is ready..!
